Chocolate Peppermint Pots de Creme.

For the baby shower, I wanted to use tea cups. It was a tea party after all. But I knew the day would be warm, and many of us aren’t tea drinkers. So, how could I incorporate all the cute tea cups I collected?
Then I remembered a simple Pots de Creme recipe my mother-in-law made, and I knew this rich and creamy chocolate dessert was just the thing.
Unlike most Pots de Creme recipes, there is no need for the oven. No water baths, no oven safe dishes. Because I was using delicate porcelain cups, this stove-top-only method was perfect. After mixing and melting chocolate, cream, sugar and eggs, you simple pour the heavenly mixture in containers (tea cups, ramekins, anything goes) and refrigerate.
The results are an easy, decedent, chocolaty treat. Thick and smooth and every spoonful good. For this recipe, I substituted the vanilla for peppermint extract. Refreshing mint and chocolate in a cup? Yes, please.

Chocolate Peppermint Pots de Creme
adapted from Better Homes and Gardens
serves 4
3 egg yolks
4 oz. sweet, baking chocolate
1 cup half-and-half
2 teaspoons sugar
1/2 teaspoon peppermint extract 
In a bowl, beat the egg yolks and set aside. 
Chop the chocolate into tiny pieces.  In a saucepan over medium heat, combine the chocolate, half-and-half and sugar. Cook and stir until mixture comes to a boil, about ten minutes. The chocolate will be completely melted the mixture should thicken.
Next, gradually add half of the chocolate mixture into the bowl with the egg yolks. Do this slowly, to prevent the yolks from curdling. Then add the egg and chocolate mixture back into the saucepan with the remaining chocolate and continue to stir on low heat. Cook for another two minutes then remove from heat. Add in the peppermint extract and stir.
Pour chocolate into dessert dishes and cover with plastic wrap. Refrigerate for 2 to 24 hours.

First of all, you are so adorably creative! Please come to VA and throw me a tea party shower. I love this idea and your last post just had me envisioning being there and loving it. And who wouldn’t love chocolate in a cup, esp. with a hint of mint? Yummy! You are super Veeda!
